Cheese is nutritious food made mostly from the milk of cows but also other mammals, including sheep, goats, buffalo, reindeer, camels and yaks. Around 4000 years ago people have started to breed animals and process their milk. That's when the cheese was born.

It comprises proteins and fat from milk, usually the milk of cows , buffalo , goats , or sheep . During production, the milk is usually acidified, and adding the enzyme rennet causes coagulation. The solids are separated and pressed into final form. [1] Some cheeses have molds on the rind or throughout. Most cheeses melt at cooking temperature.
